Whole Foods Market 365- A Better Grocery Experience

As athletes and trainers, we believe in eating nutrient-rich, whole foods, as much as possible so that we can look, feel, and perform at our best. But shopping, chopping, cooking, and cleaning can be time-consuming!

In a world driven by convenience, it can be tempting to get our groceries delivered to our doors (and we do sometimes!), but there’s something special about picking your own produce, browsing the aisles for seasonal goodies, and interacting with friendly staff.

That’s why we were excited to check out the new Whole Foods 365 in Long Beach, CA and pick up some fresh ingredients to throw together a new, healthy bowl, that we’ve been dying to make.

As soon as we walked in we were greeted by.....fresh, organic produce, a clean layout with easy to navigate aisles, affordable prices without compromised quality, and we quickly found everything we were looking for (we even ground our own almond butter!)

Okay, so we may have picked up a couple of extra goodies (they say don’t shop when you’re hungry..), but it was hard to resist the thought of a crisp can of sparkling rose with our Happy Wholesome Bowls...and what about a healthy dessert?!  Almond milk ice cream with seasonal, organic, fresh berries...YES, please.

 

It’s funny how a quick grocery run for a couple of ingredients turned into browsing and adding lots of additional groceries to our cart, but to be completely honest, we are pretty budget conscious and with all of these fresh and affordable healthy options at our fingertips it really just made sense to stock up.

Quick and easy checkout and we were on the road back home to whip up our new recipe (see below for how to make it).  Oh, and for those of you that don’t know us well, patience in the kitchen is not our strong suit, so rest assured, this recipe is very doable.

As you can see from the pics below, the bowl turned out perfectly...though it didn’t last long!

The Happy Wholesome Bowl

  • Total Time: 40 minutes
  • Yield: 2 large bowls

INGREDIENTS

  • 1 head of kale, stemmed and chopped
  • 1/2 lemon
  • 1 1/2 T olive oil (1 T for kale, 1/2 T for sweet potatoes)
  • 1/2 cup quinoa, uncooked
  • 1 large sweet potato, chopped into bite-size pieces
  • 1/2 avocado
  • ⅓ cup fresh blueberries
  • 2 T pumpkin seeds
  • 2 T hemp seeds
  • 1/4 cup fresh pomegranate seeds

Top with your favorite dressing! (we chose the Lemon Shallot Vinaigrette from Whole Foods 365)

INSTRUCTIONS

  1. Place kale in a large bowl and top with juice from half a lemon and 1 T olive oil.
  2. Massage liquid into kale for about 5 minutes or until kale has wilted.
  3. Cook quinoa according to package instructions
  4. Preheat oven to 425 degrees and place sweet potato on a baking sheet.
  5. Top sweet potato with 1/2 T of olive oil and sprinkle with sea salt.
  6. Bake for 20-25 minutes.
  7. When quinoa and sweet potatoes are finished, add to bowl with kale.
  8. Top with blueberries, hemp seeds, pumpkin seeds, and pomegranate. Mix well.
  9. Top wholesome bowls with dressing and mix until well coated.
  10. Divide bowls evenly (makes 2 large bowls) and top with avocado.
